You’ll need the following:
- Red Onion
- Green Bell Pepper
- Sun dried tomatoes
- Vegan Eggs
- Vegan Butter
- Olive Oil
- Ice Cold Water
- Salt & Pepper
Before starting, add water to a pot and add in peeled plantains to it. Season with salt. Allow to cook. 15-20 minutes.
Make sure to chop all the ingredients into small pieces.
Get your vegan eggs out. You’ll need to measure out 2 tablespoons in a bowl.
Measure out 1/2 tablespoon of vegan butter and olive oil. Place into a skillet and allow to warm up.
Once butter and oil is hot, add vegetables to the skillet. Cook for 4-5 minutes or until vegetable are tender.
Mix 1/2 cup of ice cold water to the bowl of eggs. Mix until smooth. Add in salt and pepper.
Add to vegetables. Vegan eggs take a little longer to cook, about 6-8 minutes.
